Ingredients
- Red Potatoes
- Sweet Potatoes (Optional)
- Baby Carrots
- Dry Onion Soup Mix (At least 1 packet)
- Avocado Oil
Directions
- Preheat Oven to 350° (Convection is preferable but not required)
- Cut up Red Potatoes (and Sweet Potatoes) into about 1 ½ in portions
- On a baking sheet make a single layer of Baby Carrots, Potatoes, (and Sweet Potatoes)
- Liberally drizzle Oil and give the ingredients a toss to make sure they are somewhat coated
- Sprinkle Onion Soup Mix over veggies
- Bake at 350° for ~1 hr, turning over once while baking (@ 30min mark)
