A Fowler Family Recipe. A baked with the lightness of a non-baked. Makes 2 pies or one cake.

- Crush crackers with rolling pin and mix crumbs with margarine.
- Line pan (8X8 or 9X9 in square or 9" cheesecake round) with crumbs mixture, pressing firmly to pan.
- Beat eggs, cream cheese, ¾ c sugar, salt, and 1pt sour cream. Add vanilla and lemon juice. Beat until smooth.
- Pour over crumbs in pan(s). Bake at 325° for 20 min. Cool 1 hr.
- Add 3 Tbsp. sugar to remaining 1pt sour cream. Add ½ tsp vanilla. Beat together until smooth and spread over top of cake.
- Bake again at 425° for 5 min. Cool and refrigerate.
