Night Before (Pulled Pork):
Night Before (Pulled Pork):
- Put 2-3 lb Pork in 7-8qt slow cooker with Pineapple Juice and Water.
- Let sit 8 hours on low heat. (midnight – 8am; this gives time to make chili for dinner.)
- Shred pork with forks or whatever, and start chili in same pot (don't drain).
- Dice Onion and Pepper(s). Add to cooker.
- Fill the slow cooker with the rest of the Non-Meats and Spices, and the unused pineapple. Give a few stirs to mix it up.
- In a 12in skillet, lightly brown Stew Meat with Avocado Oil, but leave some pink
- For a twist, you can rub the stew meat with brown sugar before cooking it
- DO NOT OVERCOOK, Toss in pot. (It will finish cooking in the chili)
- Cook Ground Beef/Turkey in leftover grease and COOK THOROUGHLY, toss in pot.
- Cover pot, set to med-low and let it sit 2-8 hours. Stir occasionally.
- Serve with Pairings. Refrigerate leftovers.
- Ground turkey tends to dissolve into the chili and disappear, unlike ground beef.
- Pressure cookers (like the #instapot) can be used instead to majorly decrease cook time, BUT be careful when using a pressure cooker to make pulled pork as you can easily overcook it. Instead of slow cooking your chili, set the pressure pot for 12-15 minutes (I think, but haven't tested yet to determine adequate timing). Let pressure release naturally afterwards (about 20 minutes).
- If you don't feel up to doing the pulled pork, substitute 1 lb sliced Linguiça (Portuguese Sausage) and add it to the pot when doing the chili on the Morning of. You can then substitute 1 cup water for the pineapple & its juice as the citrus is mostly meant to tenderize the pork.
