Directions - Scrambled Eggs
- In a large bowl whisk Eggs, Milk, Salt, Pepper
- In a 12" pan over medium-low heat add Butter. Once melted add Egg Mixture.
- As Mixture begins to solidify, use the turner/spatula to scrap the bottom of the pan, "pushing" the solid out of the way of the liquid.
- Repeat until there is no more liquid. Using spatula, chop eggs into smaller pieces. Put in a serving dish.
Directions - Homemade Hash
- Shred Potato into a large bowl
- Stir in cold water till cloudy. Drain, dry.
- In a large pan over medium heat put 3 Tbsp Butter, 1-2 cups Shreds, Salt and Pepper.
- Cook until lightly browned on bottom, then stir. Repeat until browned all over.
- Break into crumbles, put in a serving dish.
Breakfast Burrito Filling
(Great for premade meals)
Ingredients - Filling
- ½ c Frozen Breakfast Sausage Crumbles *Precooked* (or 2 patties/6 links)
- 1 c Frozen French Fries (Checkers Rallies works well, but you can substitute other brands or hash browns if desired)
- 12 Eggs
- ½ c milk
- 1 Tbsp Butter
- 2 dashes of Salt
- 4 dashes of Pepper
- ½ c Crumbled Bacon (Not bacon bits)
Directions - Filling
- In a 12" Pan over medium heat add Breakfast Sausage and Fries
- Cover with a lid for 10-15 minutes, stirring/flipping occasionally, until thawed enough to cut with spatula
- Chop them up to make crumbles (if they aren't already)
- In a large bowl whisk Eggs, Milk, Salt, Pepper, Crumbled Bacon
- Pour over food in pan, add Butter, and change to medium-low
- As Mixture begins to solidify, use the turner/spatula to scrap the bottom of the pan, "pushing" the solid out of the way of the liquid.
- Repeat until there is no more liquid. Using spatula, chop eggs into smaller pieces.
- Once cooked, remove from heat and serve, or refrigerate for quick and filling breakfasts during the week
